Dave and I had this meal this evening....it was easy and tasty!
Ingredients
1/3 cup honey
1/3 cup thinly sliced scallions
2 tbsp + 3 tbsp soy sauce, divided
2 tsp toasted sesame seeds
1 tbs minced garlic
3/4 tsp + 1/4 tsp ground ginger, divided
1/2 tsp red pepper flakes
1 block extra firm tofu, pressed and sliced widthwise
tbsp olive oil
1 squash, seeded and diced
1 lb green beans
1 bell pepper, diced
Instructions
- Mix the honey, scallions, soy sauce, sesame seeds, garlic, onions, ginger, and red pepper flakes in a small bowl until well blended. Place tofu on a baking pan lined with parchment paper. Spoon honey mixture evenly over the tofu. Reserve the extra honey mixture.
- Bake the tofu at 375 for 20 minutes.
- While the tofu is cooking, in a large pot or saucepan heat olive oil. Add in the squash, green beans, bell pepper, 2 tbsp water, ground ginger (or 1 tbs minced fresh) and 3 tbsp soy sauce. Simmer on low until squash is tender, 20-30 minutes, stirring frequently. Pour the extra honey mixture over the squash. Toss to combine.
- Serve the braised vegetables with the baked tofu.
